  • 1 Cup Greek Yogurt
  • 2 Tbsp Red Wine Vinegar
  • 1 Tbsp Lemon Juice
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 Tbsp Honey
  • To Taste Salt & Pepper
  • 1-2 Cloves Garlic, finely chopped
  • Walnuts or pistachios, coarsely chopped for topping

Instructions
 

  • Begin by peeling and dicing the beetroot into bite-sized pieces.
