Preheat your oven to 375°F (190°C).
In a skillet, heat 2 tbsp (30ml) olive oil over medium heat. Sauté the onion for 3-5 minutes until soft.
Add the spinach in batches, if necessary, and cook until wilted and dry.

Butter a 12-inch (30cm) pan. Layer 4 phyllo sheets, brushing each with melted butter and covering the pan sides.
Add the spinach filling. Cover with 4 more buttered phyllo sheets, folding in edges.
Score the top and drizzle with remaining butter.
Bake for 50-55 minutes until golden.
