Ingredients
  

  • 1 lb Spinach
  • 1 tsp Salt
  • 1 Onion, diced
  • 1/2 lb Salted Butter
  • 2 tsp Black Pepper
  • 1/4 cup Fresh Mint, chopped
  • 1 lb Feta Cheese, crumbled
  • 3 Eggs Beaten
  • 1/4 Cup Fresh Dill, chopped
  • 8 Sheets Homemade Phyllo

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat 2 tbsp (30ml) olive oil over medium heat. Sauté the onion for 3-5 minutes until soft.
  • Add the spinach in batches, if necessary, and cook until wilted and dry.
  • In a large bowl, combine the sIn a large bowl, combine the spinach mixture with salt, pepper, mint, feta, eggs, and dill.
  • Butter a 12-inch (30cm) pan. Layer 4 phyllo sheets, brushing each with melted butter and covering the pan sides.
  • Add the spinach filling. Cover with 4 more buttered phyllo sheets, folding in edges.
  • Score the top and drizzle with remaining butter.
  • Bake for 50-55 minutes until golden.
  • Let cool before serving.
