Ingredients
  

  • 2 Tbsp Olive Oil
  • 1 Green Onion Chopped
  • 1/2 lb Spinach
  • 1/2 Cup Chopped Mint
  • 1/2 Cup Chopped Dill
  • 1 Cup Crummbled Feta
  • 1/2 Cup Cream Cheese
  • Pepper To Taste
  • Butter For Spreading
  • 8 Slices Sour Dough

Instructions
 

  • Heat a nonstick pan over medium-high heat.
  • Add olive oil, followed by spring onions and spinach. Cook until the spinach has wilted and the excess moisture has evaporated.
  • Transfer the spinach mixture to a bowl. Add chopped mint, dill, crumbled feta cheese, cream cheese, and a good twist of freshly ground pepper. Mix thoroughly until well combined.
  • Reheat the pan over medium heat.
  • Butter one side of each slice of sourdough bread.
  • Place one slice of bread, buttered side down, onto the pan. Spoon a generous amount of the spinach and cheese mixture onto the bread.
  • Cover with another slice of bread, buttered side up.
  • Cook until the bottom slice is golden brown. Flip the sandwich over and cook until the other side is also golden brown.
  • Transfer the sandwich to a preheated oven at 400°F (200°C) for 5-10 minutes, or until the cheese inside has thoroughly melted.
  • Once ready, remove from the oven and serve immediately.
