- 2 Tbsp Olive Oil
- 1 Green Onion Chopped
- 1/2 lb Spinach
- 1/2 Cup Chopped Mint
- 1/2 Cup Chopped Dill
- 1 Cup Crummbled Feta
- 1/2 Cup Cream Cheese
- Pepper To Taste
- Butter For Spreading
- 8 Slices Sour Dough
Heat a nonstick pan over medium-high heat.
Add olive oil, followed by spring onions and spinach. Cook until the spinach has wilted and the excess moisture has evaporated.
Transfer the spinach mixture to a bowl. Add chopped mint, dill, crumbled feta cheese, cream cheese, and a good twist of freshly ground pepper. Mix thoroughly until well combined.
Reheat the pan over medium heat.
Butter one side of each slice of sourdough bread.
Place one slice of bread, buttered side down, onto the pan. Spoon a generous amount of the spinach and cheese mixture onto the bread.
Cover with another slice of bread, buttered side up.
Cook until the bottom slice is golden brown. Flip the sandwich over and cook until the other side is also golden brown.
Transfer the sandwich to a preheated oven at 400°F (200°C) for 5-10 minutes, or until the cheese inside has thoroughly melted.
Once ready, remove from the oven and serve immediately.
